I found a recipe for coconut cake for a crock pot over in [livejournal.com profile] what_a_crock  the other day. Here is the original recipe and here is how I altered it to cut some of the fat:

Coconut Crockpot Cake!

Combine:
-4 eggs (egg beaters)
-3/4 cup fat free sour cream
-1/2 cup veg oil
-1 cup water
-1 package Jello coconut cream pudding mix

Mix this all together until well blended and then add:


-1 box Coconut cake mix
-1 big handful sweetened shredded coconut (about a cup)

Mix to combine and then pour the mixture into a VERY well greased slow cooker

Cook on low for about two hours - there should be a bit of browning visible around the edges.

The cake will be set around the sides but still rather gooey in the middle - kind of like a lava cake.

If you like coconut, give it a try. I think next time I'm called upon to provide a dessert for a potluck, I'll bring this.

When I am not feeling lazy, I will try Alton Brown's recipe for coconut cake, which is more labor intensive, but does not use boxed stuff.

I found the Alton recipe to be a wonderful result, but a lot of work. And, despite beating my egg whites carefully into a meringue and adding it with the minimum number of folds needed, it never rose as it should have. I had two more dense 2 inch cakes rounds as opposed to two 4 inch, slice-able cake rounds. I used a different recipe to get more cake (this thing was a birthday cake that had to feed 20 people)

The Alton cake was an extremely pretty white, with good flavor. I still don't know what went wrong. And fresh coconut makes all the difference. I thought I didn't like coconut. I couldn't stop eating it fresh.

AB's cake recipe has reviews that either rave about it or say it wasn't worth the effort. I am trying to move away from recipes that used canned or boxed stuff because I don't want to be like "Semi-Crap Cooking with Sandra Lee".

Oooh, thanks for sharing the coconut love. I am going to have to try this.

Re: from scratch, I think Fannie Farmer has a coconut cake recipe; if so, it's likely to be less fussy than Alton Brown.

Or--I wonder if Mark Bitman has one? He is king of the simple, fine recipe.

Fresh coconut is always worth the extra effort! BTW, thanks for the new crockpot recipe, sounds yummy.
